Chili Frito Pies
Chili Frito Pies are a great way to use up leftover chili! Layers of Frito corn chips, chili, cheese, and chili toppings combine to make a cozy dinner or game-day snack. It’s simple but, oh, so satisfying.
If you like to make chili, be sure to save some for these chili Frito pies. It’s one of my favorite comfort food recipes and a great, easy dinner if you have leftover chili in the fridge or freezer.
Crunchy corn chips, savory chili, and all the toppings—it’s such a great combination of textures and flavors. The best part is that any chili you like will work! So, make your favorite or try one of my favorite chili recipes. Depending on the chili and toppings you use, you can make all kinds of frito pies.
Chili Frito Pie Ingredients
- Leftover chili: You can use your favorite recipe or try one of my chili recipes. One of my favorites for frito pies is slow cooker ground beef chili.
- Frito corn chips
- Shredded cheese: Cheddar or pepper jack cheese are great.
- Shredded lettuce
- Grape or cherry tomatoes
- Sour cream
- Sliced green onions
- Chopped cilantro
- Other toppings: Salsa, diced avocado, diced jalapeno, or guacamole.
How to Make the Recipe
☑️ Chili
If you’re using leftover chili, warm it up first on the stove or in the microwave.
☑️ Assemble the Frito Pies
I like to pile the Fritos in the bottom of a bowl first and top them with chili. Next, I add the shredded cheese, some shredded lettuce, and tomatoes.
Add a dollop of sour cream and a sprinkling of sliced green onion or cilantro. Go extra and add some salsa, avocado, or guacamole!

Ingredients
- 2 cups Frito corn chips
- 4 cups leftover chili, warmed (see note)
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1 cup grape tomatoes, halved
- 1/4 cup sour cream
- 2 green onions, sliced
- Chopped cilantro for garnish
Instructions
- Divide the corn chips among four bowls.
- Top them with one cup of chili and sprinkle the cheese over the top. Layer on the rest of the toppings, and enjoy!
Notes
Use your favorite chili recipe or try my slow cooker chili – it’s easy to make ahead.
I’ve included measurements, but feel free to adjust the amounts – there are no rules 😊
