Creamy Goat Cheese Spaghetti

This creamy goat cheese spaghetti is quick and easy! It’s a simple 20-minute pasta recipe for when you want a comforting dinner fast.

This goat cheese pasta is one of my favorite quick recipes. In about the time it takes to boil the pasta, you can make the creamy spinach goat cheese sauce, so in the end, you’ll be digging into this creamy pasta in about 20 minutes.

It’s my favorite kind of homemade fast food.

Ingredients

  • Pasta: Spaghetti or other long pasta like linguine or fettuccine work great.
  • Unsalted butter
  • Garlic cloves
  • Heavy cream
  • Fresh spinach
  • Goat cheese
  • Salt and pepper

How to Make Goat Cheese Pasta

☑️ Boil the Pasta

Cook the pasta according to the package directions. While it boils, you can start making the spinach cheese sauce.

☑️ Make the Sauce

Melt the butter in a large pan over medium heat. While it melts, smash the garlic cloves with the back of your knife and peel them.

Place the smashed garlic cloves in the melted butter. Stir and cook them for about a minute or until fragrant. Add the cream to the pan, whisk it with the butter, and discard the smashed garlic cloves once the butter and cream are combined.

Bring the cream to a simmer and add the chopped spinach. Stir the spinach so it wilts into the cream mixture.

Add the goat cheese in small parts to the sauce and stir. Stir until the cheese has melted and the sauce is smooth. Add the salt and pepper and stir.

☑️ Add the Pasta

Add the cooked pasta to the sauce and toss to coat it evenly. Serve the pasta immediately.

Ingredients

  • 6 ounces spaghetti
  • 2 tablespoons unsalted butter
  • 3 cloves of garlic, smashed
  • 1/4 cup heavy cream
  • 2 generous cups of roughly chopped fresh spinach
  • 4 ounces goat cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a pot of water to a boil. Cook the spaghetti according to package directions. Reserve 1/4 cup of the pasta water before you drain the pasta.
  2. In a 10-inch skillet, melt the butter over medium heat. Add the garlic and cook it in the butter just until it’s fragrant, stirring continuously. Add the cream and whisk it with the butter until combined. Once the cream starts to simmer, discard the garlic cloves.
  3. Add the spinach and stir. Once the spinach wilts into the sauce, add the goat cheese in small chunks. Stir until the goat cheese is melted and the sauce is creamy. Add the salt and pepper and stir. Reduce the heat to keep the sauce warm, stirring occasionally, until the pasta is ready.
  4. Transfer the cooked pasta to the sauce and toss it in the sauce. If the sauce is too thick, thin it with a few splashes of the pasta water you set aside.

  1. Creamy comfort food perfection! I used minced garlic (instead of smashed) and left it in the sauce. I also added a bit of pasta water to keep my sauce from getting too dry after adding in the noodles. Topped with grated parmesan and *chef’s kiss*
