Sun-dried Tomato Chicken Salad Wraps
Creamy sun-dried tomato chicken salad made with grilled chicken, sun-dried tomatoes, capers, and fresh thyme all wrapped up in a whole grain flatbread – this is summer lunching at it’s best.
Sun-Dried Tomato Chicken Salad Wraps
Summer calls for a few things – cold drinks on a hot day, cook-outs, road trips, and chicken salad sandwiches. For some reason, it’s only during the brightest and warmest time of year that I get cravings for a chicken dressed in a creamy dressing – in this case, a mayo-yogurt mixture with sun-dried tomatoes, capers, and herbs. Add some potato chips and iced tea on the side and suddenly I’m in a dreamy summertime lunch scenario – there’s really nothing better.
Some Things You’ll Need…
Grilled Chicken
During the summer we grill a lot of boneless skinless chicken breasts and I always make extra to keep on hand for sandwiches. Just pop it in the fridge and then the next day all you have to do is cube it, toss the dressing together and wrap it all up.
Sun-Dried Tomatoes
Do you keep sun-dried tomatoes on hand? You should! They are a pantry essential – I love them in sandwiches, as a base for pesto, and I love to chop them up and stir them into some cream cheese for bagels. Look for jarred sun-dried tomatoes marinated in herbs near the fresh tomatoes in the produce section.
Mayo+Yogurt
I used a blend of mayonnaise and plain yogurt for the dressing, which makes the dressing a little lighter without losing that classic mayo flavor that’s so important for chicken salad.
Flatout Flatbread Wraps
They didn’t pay me to say this, but I recommend giving Flatout Flatbreads a try if you make these. I love the shape – they’re rectangular instead of round making it really easy to wrap everything up. Plus they come in all sorts of flavors – look for them near the bread section at the store.

Ingredients
- 4 ounces jarred herb-marinated sun-dried tomatoes, chopped
- 2 tablespoons of the sun-dried tomato oil
- Juice from 1/2 lemon
- Leaves from 3–4 sprigs of fresh thyme
- 1 tablespoon chopped capers
- 1/2 cup mayonnaise
- 1/2 cup plain yogurt
- 1/2 teaspoon salt
- 3 cups diced cooked chicken breasts
- 6 lettuce leaves
- 6 Wraps (I used Flatout brand)
Instructions
- In a large bowl combine the first 9 ingredients. Lay the flatbread out with a lettuce leaf and scoop about 1/3 cup of the chicken salad on one end.
- Carefully roll the chicken salad up in the wrap. Repeat with remaining flatbreads. Slice each in half and serve.

Made these for a picnic with family and friends. Judging by how fast they disappeared, definitely a winner. Great taste and beautifully moist and the capers added a nice zing. Perfect summer wrap.
